Here’s the recipe:
Spiced toffee apple cake
300ml double cream
100g light brown sugar
250g caster sugar
250g self raising flour
1tsp mixed spice
250g Bramley apples peeled & sliced
To make toffee sauce place all butter, sugar & cream into a saucepan & stir over the heat until melted together , about 2 mins.
Sponge- beat the sugar & butter together in a mixer until light and fluffy.
Add half of the beaten eggs and mix well
Then add in the rest of the eggs with 1 tbsp of the flour. Beat until smooth
Using a metal spoon fold in the rest of the flour with the vanilla & mixed spice.
Line a greased tin with parchment paper and pour on the toffee sauce
Next add the sliced apples & pour over the cake batter.
Bake in a preheated oven at 170•c or gas mark 5 for 25-30 mins until the sponge comes out clean with a skewer.
Leave to cool for 5 mins then remove from the tin.
Serve with whipped cream or vanilla ice cream.
