Chef Sham spoke to Joe about Grilled Pork Tomahawk with Irish Cabbage
- Ingredients
- For the pork tomahawk:
- 1-2 pork tomahawk chops
- Salt & black pepper
- 1 tbsp olive oil
- 2 tbsp butter
- 2-3 garlic cloves, smashed
- 2-3 sprigs fresh thyme
- 1 tbsp soy sauce
- •. 1 tbsp brown sugar
- For the baste:
- 1 cube of melted butter
- 1 sprig of thyme( chopped)
- For the cabbage:
- ½ head green or savoy cabbage
- 2 tbsp butter or olive oil
- 1 tbsp honey or brown sugar
- Salt & pepper, to taste
Method:
- Prepare & season the pork:
- Put all ingredients for the pork in a mixing bowl .
- Marinade the pork tomahawk for 15-20 minutes.
- Grill the pork:
- Grilled the pork 2-3 minutes per side until golden brown, repeat the process.
- Add butter, smashed garlic, and herbs; baste pork with melted butter for 1 minute until the pork is cook.
Grilled the cabbage:
- While pork being grilled.
- butter/oil the cabbage
- grilled the cabbage until nicely charred & soft.
- For the sauce :
- 1 onion
- 1 cup of apple cider
- 1 cup of fresh cream
- Salt & pepper
- Method:
- Chopped the onion, then sauté the onion with butter until soft then add in cider.
- Reduced the mixture by half then add in cream.
- season with salt & pepper.
- Served the pork tomahawk with grilled cabbage, cider cream sauce.
