On Cookery Corner- Chef Sham from the Cottage Restaurant joined Joe Finnegan on the JF Show this morning and Sham gave his recipe for Fish Pie.

Ingredients
knob of butter
1 small onion, diced
1 leek, trimmed sliced
1 small carrot, cube
1 potato, large cubed
50 g smoked haddock(Chunk)
400ml Fish stock
200g mixed fresh fish fillets (skinned and cut into bite-sized pieces - cod, hake or salmon)
175 g raw dublin bay prawns
1 tblsp chopped fresh flat-leaf parsley
150ml cream
salt and freshly ground black pepper
Method
Heat a large pan over a medium heat. Add the butter and once it is foaming, tip in the onion, leek, carrot ,potato and smoked Haddock. Sauté for 2-3 minutes until softened.
Add the fish stock and bring to a simmer. Follow with the fresh fish and shellfish.
Return the pan to a simmer
Add the parsley and cream, and season to taste.
Pour over into a oven proof dish and top with mashed potato & bread crumbs. Bake in oven for 10 min at 180*c.
Take it out & serve with sourdough croute
