Roast BBQ Chicken
Ingredients
1 whole Chicken 1.2kg
2 tbsp Butter
1 cup tomato sauce
1 cup sweet soya sauce
2 tbsp honey
1 tbsp chili powder
1 tbsp paprika
1 tbsp Dijon Mustard
1 tbsp Chopped Garlic
1 tbsp Chopped Onion
2-3 Sprigs Chopped thyme
Sea salt and freshly ground black pepper
Preparation
⁃ Place all ingredients in a Large Mixing bowl.
⁃ Cut the back chicken into half(Spatchcock)
⁃ Make deep cuts in each chicken leg using a knife and then generously season.
⁃ Place the chicken in a baking dish, and pour the BBQ mix over the chicken, making sure every piece is well covered.
⁃ Marinate overnight or even for 24 hrs if possible.
⁃ Pre heat the oven to 180c
⁃ Bake for 45 minutes covered with foil, the remove the foil and bake for another 15 minutes with the grill.
⁃ When cooked take it out from the oven and leave it to rest
- Serve with salad, chips, or spicy wedges.
